(מצרכים (20-25 עוגיות תפוז:

כוס וחצי קמח לבן

חצי כפית אבקת אפיה

חצי כוס סוכר (*מי שאוהב מתיקות מעודנת יותר אפשר להסתפק בשליש כוס סוכר)

שליש כוס שמן

גרידת תפוז שלם (כ-2 כפות קליפת תפוז מגורדת בפומפיה דקה)

1 ביצה

1-3 כפות מיץ תפוזים סחוט טבעי

אופן הכנה:

-מחממים תנור ל180 מעלות ומרפדים את תבנית התנור בנייר אפיה.

-מערבבים בעזרת כף את כל החומרים לפי הסדר הרשום עד לקבלת בצק רך ונוח לעבודה. את מיץ התפוזים מוסיפים בסוף, בהדרגה ולפי הצורך.

-פורסים נייר אפיה על משטח עבודה ומרדדים עליו את הבצק לעובי כחצי ס”מ (אם הבצק נדבק למערוך אפשר לפרוס נייר אפיה נוסף מעל הבצק ולרדד עליו). קורצים עוגיות בעזרת קורצן או כוס קטנה הפוכה ומסדרים במרווחים קלים בתבנית על נייר אפיה.

-אופים במשך 10-12 דקות, עד שהעוגיות מזהיבות מעט בשוליים. מוציאים מהתנור ומניחים לעוגיות להתקרר לגמרי (העוגיות מתקשות לאחר קירור).

*שומרים בקופסה אטומה מחוץ למקרר.

Honey Cake

Ingredients:

4 eggs separated
1 tablespoon brandy
1 cup of honey
1 packet of vanilla sugar
1/4 cup oil
1 1/2 cup of gluten free flour
1 teaspoon cinnamon
1 teaspoon baking powder
Cloves

Method:.

  1. Mix in the mixer the whites.
  2. Mix the yolks and add the oil and honey.
  3. Add to the yolk mixture the brandy and gradually add the flour. Add the cinnamon and the baking powder.
  4. Add the whites to the mixture.
  5. Continue mixing slowly until the mixture is blended well.
  6. Move to a baking tin and bake on 180 degrees for 40 minutes.

Tourte Cake

Ingredients:

6 eggs separated
Lemon peel
1 cup of sugar
1 teaspoon Vanilla essence
1 tablespoon oil
1 1/2 cup of gluten free flour
1 baking powder
1 teaspoon conyak

Method:

  1. Mix the whites with the sugar till fluffy
  2. Mix in the mixer the rest of the ingredients then add gradually the mixture to the white mixture.
  3. Move to a baking tin and bake on 150 degrees for 20 minutes.

Bobbie’s Chocolate Cake

Ingredients:

200 grams bittersweet chocolate
2 Eggs
4/5 cup of Sugar
100 grams of margarine
1 cup of flour
1/2 Packet of baking powder
1 tablespoon full of cocoa
2 tablespoons warm water
1 teaspoon vanilla essence

Method:

  1. Mix the sugar and the margerine till its nearly whiite and fluffy.
  2. Whip the eggs with the mixture and gradually add the flour.
  3. Gradually add to the mixture the rest of the ingredients.
  4. Bake on 180 degrees for 40 -60 minutes.

Sponge Cake #2

Ingredients:

3 eggs separated
1 cup of sugar
1/4 cup of oil
1 cup of gluten free flour
1 packet baking powder

Method:

  1. Mix the whites with a pinch of salt.
  2. Mix in the mixer the yolks with the sugar until nearly white and then add gradually the oil and the flour.
  3. It is possible to add to the mixture and teaspoon of vanilla essence or Lemon/orange juice.
  4. Gradually add the whites to the mixture
  5. Move to a baking tin and bake on 180 degrees for 40-50 minutes.

Sponge Cake

Ingredients:

6 eggs separated
A pinch of salt
1 1/4 cups of sugar
1 packet of vanilla sugar
2 tablespoons oil
1 cup of gluten free flour
1 1/4 baking powder

Method:

  1. In a small dish mix the yolks with 2 tablespoons of the oil.
  2. Mix in the mixer the whites and the salt and gradually higher the speed, gradually add the sugar. Once the cream is stiff lower the speed and add gradually the yolk mixture.
  3. In another dish mix the flour with the baking powder, then add to the mixture.
  4. Continue mixing slowly until the mixture is blended well.
  5. Move to a baking tin and bake on 150 degrees for 50 minutes.

Chocolate chipped biscuits

Ingredients:

3 eggs
1 packet of margarine
1 cup of sugar
2 teaspoons vanilla essence
1 cup of potatao flour
2 cups gluten free flour
1 teaspoon baking powder
1 1/2 baking soda
1/2 teaspoon salt
1 bag of chocolate chips

Method:

  1. Mix all the wet ingredients in 1 dish and all the dry indredints separately in another dish.
  2. Mix together to form the dough.
  3. Make small balls out of the dough and bake for 10 minutes

Crispy biscuits

Ingredients:

2 egg yolks
packet of margerine
1/2 cup of sugar
1 teaspoon vanilla essence
2 1/2 cups of flour
1/4 lemon skin

Method:

  1. Mix all the ingredients together till a dough is formed.
  2. Make small balls out of the dough
  3. Chocolate, almonds and raisens can be added.
  4. Bake until golden.

Nostalgic Orange Cake

Ingredients:

6 eggs
3/4 cups of oil
2 cups of sugar
1 cup of orange juice
2 1/2 cups of flour
1 baking powder
a little fruit and orange liquer

Method:

  1. Whisk the eggs in a bowl
  2. Slowly add the sugar till creamy.
  3. Gently add the oil, the orange juice, the flour and baking powder
  4. Oil a round baking tin and add the mixture.
  5. Bake on 175 degrees for 40 minutes.

Few tips:

  • For a marble cake – take a cup of the mixture, add to it a spoon pf cocoa. Mix and add it to the mixture with a knife.
  • It is possible to mix the whites with only 1 cup of sugar and mix with the remaining mixed ingredients.
  • Coating – with sugar powder.

Abe’s Cheese cake

Ingredients:

5 separated eggs
4 spoons of cornflour
750 gram white cheese
3/4 cup of sugar
Vanilla pudding
1 sweet cream

Method:

  1. Whisk the egg whites with the sugar till cream is stiff.
  2. Mix in a separate bowl 2/3 of the pudding + cheese + cream + egg yolks + cornflour
  3. Stir the first mixture into the second gently.
  4. Bake on 180 degrees for 50 minutes.
  5. Mix 1/3 pudding  + cream and cover the cake.
