Leek and potato soup

Ingredients:

Butter for frying
1 clove of garlic crunched
1 Leek
2 Medium sized potato’s
1 Litre of water with soup powder
Salt & pepper

Method:

  1. Clean and chop up the leek and the garlic. Fry them up until soft (for approx. 10 minutes).
  2. Cut the potato’s into small cubes and add to the pan. Add all the rest of the ingredients.
  3. Bring to a boil and leave on a low light for 20 minutes.
  4. Pulverize and then heat again for another 10 minutes and serve.

Smooth sweet potato soup

Ingredients:

2 Sweet potato’s
2 potato’s
1 big piece of pumpkin
1 small squash
Salt  and pepper
Chopped onion
2 tablespoons oil
Soup powder

Method:

  1. Chop up the potato’s, the sweet potato’s, the pumpkin and the squash into cubes, cover with water and boil.
  2. Fry up the chopped onion in the oil.
  3. Once the water has boiled add the soup powder, salt and pepper, the oil and the fried onion to the soup.
  4. Pulverize in the blender until smooth.

Winter pea soup

Ingredients:

1-2 cups of peas
1 onion
1 teaspoon coriander
1 sprig of parsley
1 stalk of celery
2 teaspoons of turmeric
2 teaspoons of curry
1 teaspoon Salt
1/4 teaspoon dry chili powder
1/2 cup of olive oil
3 grated carrots and 1 grated potato

Method:

  1. Wash the peas.
  2. Fry up the onion, celery, potato and carrots till brown.
  3. Add the peas and continue to fry for another 5 minutes
  4. Add water, about 2 millimeters above the vegetables and bring to a boil. Cook for 20 minutes until soft.
  5. Add the seasoning and cook for another 5 minutes.
  6. Add the parsley and coriander, pulverize the soup and cook for another 15 minutes till thick,

Corn soup

Ingredients:

4 cups of water
3 tablespoons soup powder
Corn Flour
2 teaspoons sugar
1 teaspoon Salt
Egg
2 cups of corn

Method:

  1. Add 4 cups of boiling water to a pan and add 3 tablespoons of soup powder and stir well till there are no lumps. Bring to a boil.
  2. Add 2 cups of  frozen corn to a sieve and wash under running water till defrosted.
  3. Pulverize the corn in a blender and then add to the pan. Add salt, pepper and 2 teaspoons sugar and stir.
  4. Mix 2 tablespoons of corn flour with 2 tablespoons water and add to the soup while stirring
  5. Beat the egg and add gently to the soup while stirring.
  6. Cook for 20-30 minutes.

Pumpkin soup

Ingredients:

1 chopped Onion
1 chopped garlic
Pumpkin
3-4 carrots
1 teaspoon dill
1 teaspoon soup powder
Salt and pepper

Method:

  1. Add the vegetables to a pan and boil in 4 cups of water.
  2. Add seasoning.
  3. Cook until soft and then pulverize in a blender till smooth.

Tomato soup

Ingredients:

1 Onion
1 tablespoon sugar
10 tomato’s skinned and chopped
Salt and pepper
Soup powder
1 glass of wine
3/4 cup of rice

Method:

  1. Fry the onion till golden.
  2. Add the sugar and the tomato’s and season.
  3. Cook without adding water.
  4. Add a glass of wine and stir well.
  5. Add the rice and stir in. Add another 3-4 cups of water and cook covered for 5 minutes

Sweet potato soup

Ingredients:

4 Sweet potato’s
2 potato’s
1/2 an onion
2 teaspoons soup powder
1 teaspoon crushed garlic
2 tablespoons chopped basil

Method:

  1. Chop up the potato’s, the sweet potato’s and the onion into cubes, cover with water and cook until soft (approx. 30 minutes).
  2. Pulverize the vegetables in a blender till smooth.
  3. Return to the pot, season and cook for another 10 minutes.

Pea soup with rice

Ingredients:

6 cups of water
1/4 kilo peas
Salt and pepper
1 tablespoon soup powder
Turmeric
1/2 cup of rice
1 Clove of garlic
1 onion

Method:

  1. Boil up the peas in 3 cups of water for 30 minutes, add another 3 cups of water, seasoning and the rice.
  2. Fry in another pan the onion and garlic then add them to the soup..
  3. Cook on a low light for 30 minutes.

Vegetable soup

Ingredients:

2 onions chopped
2 cloves of garlic crunched
3 carrots
3 courgettes
3 small potato’s
1 cup of green lentils
Salt & pepper
1-2 tablespoons parve soup powder
2-3 bay leaves
2-3 tablespoons of oil

Method:

  1. Heat the oil in a pan and add the onion and fry in the oil till golden. Add the garlic.
  2. Cut all the vegetables into 1×1 cubes and add to the pan. Add also the lentils.
  3. Add the water to cover the vegetables, the soup powder and the bay leaves and cook until all the vegetables are soft.
  4. Season again and add water if needed.

Pea soup

Ingredients:

1/2 kilo frozen peas
2 onions
50 grams butter
5 cups of water
A little Soy sauce
Chicken soup powder
A pinch of Tabasco
Salt and pepper
2 cloves of garlic

Method:

  1. Chop the onion and saute in the butter till golden.
  2. Add the peas and fry.
  3. Add the water, soup powder, soy sauce, garlic, Tabasco and season.
  4. Bring to a boil and cook on a low light for 30 minutes.
